Tomato Balsamic Mint Salad
Tomato, mint, and shallots make for a light refreshing side or mid-day meal. The perfect compliment to the Crispy Herb Chicken, both perfected with Mint Herb Oil.
4 cups heirloom cherry tomatoes, sliced in half
1 thinly sliced shallot
A handful of fresh mint, chopped (optional)
2 Tbsp balsamic vinegar
2 Tbsp Mint Hemp Oil
Salt and pepper to taste
HOW TO MAKE:
Place tomatoes and shallot in a bowl. Toss with fresh mint. Drizzle balsamic vinegar and mint hemp oil over the top and season to taste with salt and pepper. Don’t touch for 20 minutes. We know it’s hard, all those colors staring at you tempting you to take a bite, but if you can wait the flavors will pop and your taste buds will thank you.
